CHEF NORMAN GIBBONS, OWNER


Born in the island of Jamaica well known for flavor it’s no surprise that cooking became his passion.  Chef Gibbons main reward comes from the captivated faces of his customers when a dish is presented and the appeased smiles they have once they have cleaned their plates.


“I have always been a cook.  From a kid growing up in Jamaica watching my mom and grandma make meals, I have always been fascinated by how they take simple ingredients like flour and water and plantains, oil and potatoes and spin them into mouth-watering delights. I have always wondered how they can use seemingly ordinary items and create such happiness (which was in short supply back then) inside all who were lucky enough to sample their handywork.  I have been on a quest ever since to bring this same happiness to all who may partake of the produce of my kitchen.”

Where most usually take classes and learn to make dishes out of a book. Chef Gibbons has gone the old-fashioned route of apprenticing with different chefs up and down the east coast from Maine to Florida, who were willing to teach him the intricacies of formal culinary both as an artist as well as chef. The only thing that competes with the extravagant taste of his dishes is the marvelous presentations. “I have learned a great deal from these great chefs and my education is ongoing.”
